Olive Oil Banana Nut Bread with Golden Raisins
There are times when a great recipe is created due to an accident or improvising. This one is the latter. I was also determined to use the old bananas in the kitchen instead of them being thrown into the trash bin. However, while gathering my ingredients I realized I didn’t have enough canola oil. But there was a beautiful bottle of olive oil looking back at me. Little did I know that the olive oil knew the entire time that this banana bread would be raised to different heights and get on a completely different level because of this improvisation. The banana bread was beautifully moist with a crispy, crackly top. The flavor of the olive oil puts a delicious twist on the traditional banana nut bread that is enhanced by the sweet, golden raisins. Now, I must say that I am not the first to use olive oil in banana nut bread. I just didn’t plan on using it in this recipe but it definitely was a plus.

Olive Oil Banana Nut Bread with Golden Raisins
Yield: 1 loaf
2 cups all purpose flour
1 1/2 tsp baking soda
1 tsp salt
1 cup mashed bananas, about 3 ripe bananas
2 eggs
1 cup sugar
1/2 cup brown sugar
3/4 cup olive oil
1 cup of walnuts
3/4 cup raisins
1 tsp vanilla extract
Preheat the oven to 350 degrees F. Grease and flour a bread pan. Mash the ripe bananas in a large mixing bowl. Add the sugar and all wet ingredients. Mix thoroughly.
In a separate bowl, add and thoroughly mix the all purpose flour, baking soda, and salt.
Add dry ingredients into the bowl with the wet ingredients and mix. Afterwards, pour the covered walnuts and raisins into the batter mixture. Stir until no dry parts remain.
Add the batter to your prepared bread pan and put into the preheated oven. Bake for 65 to 75 minutes or until a toothpick inserted into the center of the bread comes out clean
